Marbling:
For most markets, higher MVPs are favored
for marbling, which is reported in units of USDA marbling
score.
Tenderness:
Lower MVPs are favored for tenderness,
which is assessed in lbs. of force required to shear a piece
of longissimus dorsi muscle, cooked to a standard proto-
col.
Marbling and Tenderness Ranks:

Palatibility Index:
Palatibility index scores rank animals
in net genetic merit for marbling and tenderness (equal
weighting), where values below 100 suggest marginal eat-
ing satisfaction, scores between 100 and 355 indicate ac-
ceptable palatibility and scores above 355 identify genet-
ics for superior combinations of tenderness, juiciness and
flavor.

HD 50K
- 50K for Angus is the first commercially available
Molecular Value Predictions (MVPs) derived from a High-
Density panel with more than 50,000 markers. The suite of
14 genomic trait predictions, including the beef industry’s
first DNA-based economic index, provides MVPs for some
ecnomically important traits not available as EPDs like
ADG, Dry Matter Intake and tenderness, as well as many
traits that complement EPDs. 50K MVPs help to more ac-
curately predict genetic merit in young, unproven animals
as early as four months of age, as compared to moder-
ate or high-accuracy EPDs that require years of data. The
EPDs of the sale bulls that have the 50K logo by their pedi-
grees reflect the increased accuracy and essentially EPDs
with accuracy equivalent to anywhere from 7 to 20 offspring
