During the period of 1993 through 2007, 1,311 Mill Bar steers were
slaughtered at an average age of 14 months with an average live
weight of 1,235 pounds and an average hot carcass weight of 778
pounds. 1,309 head from that group or 92% graded USDA Choice or
Prime with only 114 head or 8% grading Select. Mill Bar steers quali-
fied an extra 36% more Choice and Prime and 28% less Select than
the industry average documented by the National Beef Quality Audit
with no Standard grades compared to the national average of 8%. At
the same time, the consistently high quality Mill Bar steers were 98%
Yield Grade 2 and 3 with 1% each Yield Grades 1 and 4.

compared to the current national average certification rate of 17% of
all visually qualifying animals.
